Grub Rubs


I enjoy experimenting with spice rubs. I have these rubs elsewhere in Kitchen Tapestry with the intended dish for which the rub was created.  However, I often want a go-to page with just the rub recipes when I'm in a hurry and don't want to have to reinvent the wheel.  Here are four really good universal rubs and the meats for which they were intended.  Truth is, you can probably use these interchangeably.

Ingredients for Beef Brisket or Short Ribs
2-½ tbsp paprika
2 tbsp smoked salt
2 tbsp garlic powder
2 tbsp dried lemon peel
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp ground black pepper

Ingredients for Veal Chops or Pork Chops
2 tbsp dry rubbed sage
2 tbsp lemon pepper
2 tbsp dried oregano leaves
2 tbsp dried thyme
1 tbsp garlic powder
1 tbsp smoked salt

Note:  For Lamb Chops, add 2 tbsp ground rosemary

Ingredients for Roasted Chicken
1 tsp fine ground sea salt
1 tsp garlic powder
1 tsp paprika
1/3 tsp white pepper
1/3 tsp cayenne pepper
1/3 tsp black pepper
1/3 tsp onion powder
1/3 dried thyme

Ingredients for Pork Shoulder (Boston Butt)
1/4 cup course ground sea salt
1/4 cup black pepper
1/8 cup chili powder
1 tbsp dried oregano
1 tbsp dried thyme
1 tsp cayenne pepper

Ingredients for Country Style Pork Ribs
1-1/2 tbsp smoked salt
2 tbsp black pepper
1 tbsp crushed dried rosemary
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried oregano
1/2 tsp cayenne pepper

The Recipes
Blend the seasonings in a mixing bowl with a wire whisk until thoroughly combined and evenly distributed.

For beef brisket, short ribs and the Country Style pork ribs, sprinkle on some apple cider vinegar and then evenly coat the meat by sprinkling on the seasonings and rub it into the meat with your hands.

For the pork chops, veal chops, lamb chops and chicken, combine the seasonings with 2-3 tablespoons of olive oil, and whisk until a consistent paste is formed.  Rub this paste into the meat with your hands.

For the Pork Shoulder, slather the meat with olive oil, liberally sprinkle on the seasonings, then rub it into the meat.
