Microwave Low Carb Mug "Bread"

I'm grateful that one cannot copyright a recipe.  One can copyright the printing of a recipe or a collection of recipes, the name of the recipe and associated photos, but because ingredients of a recipe and its accompanying measurements are considered intangible ideas using common ingredients in the public domain, an individual recipe escapes the definition of a creative work that is afforded protection from piracy under US Copyright Law.  I am grateful, therefore, that this recipe isn't protected, because it's about the most amazing low-carb, gluten-free, sugar-free, Keto-friendly, Atkins-friendly, grain-free facsimile to bread I've ever tasted. However, I will give all the credit for its creation to A Spicy Perspective website under the name "Magic Mug Low Carb Bread," by its author, Sommer Collier.

After returning from my day's activities, my Number One Fan ordered me to close my eyes as I entered the kitchen.  "Taste this," she said as a most delectable aroma hit my nose, and I was soon munching on....what?  Bread?  Regular bread?  Or perhaps cornbread?  The pat of butter added to the flavor and texture sensation of the nibble.  Since we're both on carb restricted diets (for the moment, at least), she had been researching low carb bread recipes, of which there are plenty on the Internet.  But none that are as fast and easy as this one, and the results are indeed sublime

The creation of this recipe is attributable to Sommer Collier's daughter, Ava, who tested scores of recipes before creating this one.  Apparently, the child - afflicted with IBS and perhaps other grain related allergies - wasn't going to rest until she had a reasonable, easy-to-make facsimile of bread.

As Professor Higgins said in My Fair Lady, "I think she's got it.  By George, she's got it!"

As the name of the recipe implies, you need a large coffee mug to pull this recipe off in your microwave oven.  The mug should be the kind that holds roughly 2-1/2 cups, measuring about 3-1/2-inches in diameter and about 5-inches tall.

Ingredients
2 large eggs
1/2 cup fine ground almond flour (like, Bob's Red Mill)
1/2 tsp baking powder (like, Clabber Girl)
1/4 tsp salt
non-stick cooking spray (like, Pam)

The Recipe
Liberally spray the inside of the mug with the non-stick spray.  Crack the eggs into the mug and whisk briskly with a wire whisk.

Add the almond flour, baking powder and salt, and then whisk some more until very smooth.

Tap the mug onto the countertop a few times to dislodge any air pockets.

Microwave on high for three minutes.  Shake the loaf out of the mug, slice and serve warm.
