Red Hot Mess


This was something I made on the spur of the moment with ingredients I had on hand and named it instantly based on the fact that it is a mess, it was served hot and had red onions topped with Cholula Hot Sauce, hence, a Red Hot Mess, something of a double entendre.  In any event, it made for a delicious hearty breakfast.  While I used Cholula Hot Sauce, any hot sauce will do. You could even add jalapeños for some extra zing.

You will need a skillet with a tight-fitting lid, and if the lid is made of glass, it will greatly aid your getting the eggs off the heat before the yolks turn hard.  If you prefer hard yolks, it doesn't really matter.

Ingredients
2 large pats of butter
1/2 cup red onion, diced
1/2 cup Jimmy Dean turkey sausage crumbles
3 fresh eggs
1/4 cup cheddar cheese, shredded
2-3 heavy dashes of Worcestershire Sauce
3-4 shakes Cholula Hot Sauce

The Recipe
Set your skillet on the stove and turn the heat to high.  Melt the butter.

Saute the red onions for 4-5 minutes until they're limp and starting to pick up a little caramelized color, then add the sausage crumbles.  Since the sausage crumbles are already fully cooked, you only need to bring them up to temperature, about 3 minutes. If you're using jalapeños, add them to the skillet with the red onions.

Stir the ingredients so they are more or less flat in the center of the skillet, and crack the three eggs right over top.  Give 2-3 shakes of Worcestershire Sauce over the whole mess and then put the skillet lid on.

Cook 3-4 minutes until the yolks are starting to turn white on top, then quickly add the cheese on top of the eggs and cap the skillet back on for another minute or so until the cheese melts and the egg whites are fully cooked.

Top with Cholula or any other hot sauce.
